How to Make Vegan Brown Sugar Champagne Frosting

An interesting frosting that uses up leftover champagne or sparkling wine for a sparkling and refreshing taste.

Ingredients


  • 12 oz brown sugar (again, use sucanat or other cane juice crystals if you are worried about charcoal filtering)
  • 1/3 cup vegan margarine, room temperature
  • A splash of vanilla
  • A splash of champagne


Steps


  1. Use a blender to reduce brown sugar to a powdered sugar consistency.
  2. Mix in margarine, vanilla and champagne.
  3. Add just barely enough liquid to create a workable consistency, not so much that it comes out runny.
  4. Frost cooled cupcakes quickly. This frosting goes perfectly with Vegan Champagne Cupcakes.
